What are boudin balls?

Boudin is the Cajun answer to a sausage: a blend of cooked pork, rice, onions, peppers and seasoning, usually stuffed into a casing.[A] Boudin balls skip the casing. The filling is rolled into balls, coated in breadcrumbs and deep fried, so you get a crisp shell around a soft, spicy center. Explore Louisiana describes them as “the Cajun equivalent of a sausage or meatball appetizer”.[A]

In south Louisiana they are sold everywhere from specialty meat markets to gas stations, and Explore Louisiana names places such as NuNu’s Fresh Market in Youngsville, Johnson’s Boucanière in Lafayette and Chops Specialty Meats in Broussard.[A] Around Houston they show up on Cajun menus, icehouse menus and at seafood places as an appetizer.

Is boudin just dirty rice in a casing?

It is close, which is why people ask. Both use rice cooked with seasoned meat and the “trinity” of onion, celery and bell pepper. Boudin is usually made with more pork, is wetter and softer, and is bound so it holds together in a link or a ball. Dirty rice is a loose side dish, often made with chicken livers or ground meat.

How to make boudin balls at home

The easiest route is to start with fully cooked boudin links from a meat market or grocery store. This makes about 20 balls.

What you need

  • 1 pound cooked boudin
  • 1/2 cup all-purpose flour
  • 2 eggs beaten with 2 tablespoons milk
  • 1 1/2 cups breadcrumbs or panko, seasoned with a pinch of Cajun seasoning
  • Vegetable or peanut oil for frying
  • Creole mustard, or mayonnaise mixed with Creole mustard, for dipping

Steps

  1. Remove the casing. Slit the links and squeeze the filling into a bowl. Break it up with a fork.
  2. Shape. Roll the filling into balls about 1 1/2 inches across. If it is too loose, chill it for 20 minutes first.
  3. Bread. Roll each ball in flour, dip it in the egg wash, then roll it in breadcrumbs. For a thicker crust, dip in egg and crumbs a second time.
  4. Chill. Refrigerate the breaded balls for 15 to 30 minutes so the coating sets.
  5. Fry. Heat 2 to 3 inches of oil to 350°F. Fry in small batches for 3 to 4 minutes, turning, until deep golden. Drain on a rack or paper towels.
  6. Serve hot with Creole mustard or a mustard and mayo dip.

Tip: to bake instead of fry, spray the breaded balls with oil and bake at 425°F for about 15 minutes, turning once. They will be less crisp but still good.
