What are charbroiled oysters?
Charbroiled oysters are fresh oysters left on the half shell, topped with a sauce of butter, garlic and herbs, dusted with grated cheese and cooked directly over a hot grill. The butter bubbles and spits in the shell, the cheese browns and the edges of the oyster curl. They are served hot, usually with French bread to mop up the butter.
Explore Louisiana, the state’s official tourism site, traces the dish to Drago’s Seafood Restaurant in Metairie. In 1993 Tommy Cvitanovich, the son of founders Drago and Klara Cvitanovich, took the technique and ingredients from a redfish dish and applied them to oysters. It describes the result as oysters in a sauce of butter, garlic and herbs, dusted with Pecorino Romano and cooked on a grill.[A] Versions of it now appear on menus in the Houston area, including some of the places listed below.
Charbroiled, chargrilled, grilled or roasted?
Menus use these words loosely. “Charbroiled” and “chargrilled” normally mean the same dish: oysters cooked on the half shell over an open flame with butter and cheese. “Grilled oysters” can mean that, or simply oysters grilled with a lighter topping. “Roasted” or “baked” oysters are usually cooked in an oven or on a roaster rather than over direct flame. If the menu is not clear, ask what the topping is and how they are cooked.

How to make charbroiled oysters at home
This is our home method for a gas or charcoal grill. It follows the classic Gulf Coast style: garlic butter, a hard grated cheese and high heat. It makes 2 dozen oysters, enough for 4 people as a starter.
What you need
- 24 fresh oysters in the shell, scrubbed under cold water
- 1 cup (2 sticks) salted butter, softened
- 6 cloves garlic, finely minced
- 2 tablespoons chopped flat-leaf parsley
- 1 teaspoon black pepper, and a pinch of cayenne or Cajun seasoning if you like heat
- 2 teaspoons lemon juice
- 3/4 cup finely grated Parmesan and Pecorino Romano, mixed
- French bread and lemon wedges to serve
- An oyster knife, a thick towel or glove, and tongs
Steps
- Make the garlic butter. Mash the soft butter with the garlic, parsley, pepper, cayenne and lemon juice. You can do this a day ahead and keep it in the fridge; take it out 30 minutes before cooking.
- Shuck the oysters. Hold each oyster flat side up in a folded towel, work the knife into the hinge and twist to pop it. Slide the blade along the top shell to free the oyster, then under the oyster to cut the bottom muscle. Keep the deeper cup shell and as much of the liquid as you can. Throw away any oyster that was open before shucking and does not close when tapped.
- Heat the grill. Get it as hot as it will go, around 450 to 500°F with the lid closed. The oysters should sit directly over the flame.
- Butter them. Set the oysters on a tray and spoon about 1 heaped teaspoon of garlic butter onto each one.
- Grill. Place the shells on the grate with tongs. Close the lid for 3 to 4 minutes, until the butter bubbles hard and the oyster edges start to curl.
- Add the cheese. Sprinkle cheese over each oyster, close the lid and cook for 2 to 3 more minutes, until the cheese melts and browns at the edges. Flare-ups are normal; keep them short.
- Serve right away. Lift the shells with tongs onto a sheet pan or a bed of rock salt so they stay level. Serve with bread for the butter and lemon on the side.
Tip: if you cannot shuck, ask a seafood market to shuck the oysters for you and keep the half shells. Grill them the same day.
No grill? Use the oven broiler
Set the buttered oysters on a rimmed sheet pan lined with crumpled foil or rock salt so they do not tip. Broil on the top rack for about 5 to 7 minutes, adding the cheese for the last 2 minutes. You lose the smoky flavor, but the butter and cheese still do most of the work.
Are charbroiled oysters fully cooked?
Charbroiled oysters are cooked, not raw, but they are cooked quickly and served soft. The FDA’s general guidance is that most seafood should reach an internal temperature of 145°F. Its other doneness sign for oysters, shells opening during cooking, does not help here because charbroiled oysters are shucked before they go on the grill, so temperature and a firm texture are the better checks.[27] The FDA also advises pregnant women, children, older adults and people with weakened immune systems to avoid raw oysters.[27] If you are in one of those groups, cook the oysters longer, until they are firm all the way through, or choose fried oysters instead.
Where do the oysters come from?
Gulf oysters are eastern oysters, a species NOAA Fisheries describes as ranging from Canada to the Gulf.[D] Texas public waters are open for oyster harvest from 1 November to 30 April, though single bays can close earlier when stocks are low.[26] Restaurants can buy from other states outside that window, so charbroiled oysters are on menus all year.
