America’s Test Kitchen sums up the two camps neatly. The Maine roll is “cold lobster shrouded in mayo, stuffed into a bun, and bespeckled with chopped celery”. The Connecticut roll uses warm lobster: “slather it in melted butter and drop it in a warm, toasted hot dog bun”. The one thing both sides agree on is that the bun should be toasted.[A]

How to make a lobster roll at home
This makes 4 rolls. Frozen cooked lobster meat from a seafood market works if you cannot cook live lobster.
- 1 pound cooked lobster meat (tail, claw and knuckle), cut into bite-size pieces
- 4 split-top buns, or soft hot dog buns
- 2 tablespoons soft butter for toasting
- For Maine style: 3 tablespoons mayonnaise, 1 small celery stalk finely chopped, 1 teaspoon lemon juice, salt and pepper, chives
- For Connecticut style: 4 tablespoons butter, melted, and a squeeze of lemon
- Toast the buns. Butter the outsides and toast them in a skillet over medium heat until golden on both sides.
- Maine style: fold the lobster gently with the mayo, celery, lemon, salt and pepper. Keep it cold and pile it into the warm buns. Top with chives.
- Connecticut style: warm the lobster in the melted butter over low heat for 2 to 3 minutes, just until hot. Spoon into the buns and pour a little of the butter over the top.
If you cook the lobster yourself, the FDA’s guide to doneness is that lobster flesh becomes firm, pearly and opaque, and most seafood should reach an internal temperature of 145°F.[27]
